REPORT FROM GLYCEMIC MOUNTAIN
Well, I've been back from my recent trips to Glycemic Mountain for a few
weeks now, during which time I've had time to think more about the
impact of the glycemic index on current dietary advice.
Some time ago I said I thought the GI was a side show - I could have
been a bit too harsh, (after all, those people who've sacrificed their
fingers in furthering the interests of science would be horrified to
know that blood was draw in vain!) but I don't think so.
THE SIDE SHOW
If you're chained to a desk all day, you don't do any vigorous physical
activity and you eat junk food, there is a reasonable chance that sooner
or later the mechanism designed to lower the level of sugar in your
blood will pack up. The symptom of this dysfunction is diabetes. You've
got a buggered pancreas.
If you're one of these people whose on the diabetic journey, it's useful
to know that if you eat low glycemic index food (based on the John
Herbert Miller standard) it may act as a prophylactic - but compared to
protecting yourself with vigorous physical activity it's probably a side
show.
The best way to protect yourself from diabetes is with vigorous physical
activity. It reduces the level of insulin resistance in your muscles and
the muscles and liver work together to moderate blood sugar levels
without placing persistent strain on your pancreas. How much physical
activity is also open to conjectured. If, while you're reading the
